Cucumber finger sandwiches
The classic cucumber sandwich is a must-have for a fail-safe afternoon tea
A cucumber finger sandwich is a quintessential item to have at an afternoon tea and our version includes fresh mint for a herbaceous and light addition to the classic sandwich.
Serve alongside some bubbly like Champagne, Prosecco or English Sparkling wine for a special treat with friends or family.
cream cheese
mint, finely chopped
unsalted butter, softened
8 slices thick-cut white bread
cucumber, sliced into rounds
In a medium bowl, mix the cream cheese and mint. Season. Butter 4 slices of bread. Spread each of the remaining 4 slices with 2tbsp cream cheese mixture.
Put cucumber slices in two layers over the cream cheese, then top with the buttered slice of bread. With a sharp serrated knife, cut off crusts, then cut each sandwich into 3 fingers.
